  • After stabilization of the column, it is necessary to select the "head" fraction. The most convenient way to do this is through a special head selection unit. Just adjust the needle valve for the drop-by-round selection of "heads" (about 1-2 drops per second).
  • After selecting the "heads", approximately 100-200 ml (if the primary wort is on sucrose) or 150 - 300 ml (if the primary wort is on fructose) reduce the intensity of cooling the reflux condenser to obtain the distillate of the desired strength in the collection unit of the finished product.
  • If you wish, you can add any natural flavors to the gin basket and thus get a distillate with the taste and aroma of herbs, berries, fruits, etc. Using a special tap, you can at any time drain the fusel oils that accumulate inside the gin-basket.
  • Do not forget to use a silicone tube to collect the product, in order to avoid unnecessary evaporation of alcohol into the air during collection.
  • As the alcohol content in the primary wort decreases, the thermometer readings on the distillation still will begin to grow, up to 98 ° C - these are routine indicators.
  • When the alcohol content in the mash is less than the critical one, the distillation process is slowed down automatically, this is expressed in a sharp drop in the intensity of the pick-up, up to the cessation of the product pick-up. The temperature on the thermometer at the top of the column (above the dephlegmator) will begin to fall - to fall below 74-76°C. This indicates the automatic completion of the distillation process.
  • Keep track of the thermometer on the cube. If its readings exceed 100°C, turn off the heat source and, after waiting for the mash column to cool down, disassemble it in order to check for clogging.
